I made myself a little diet-friendly salad for dinner tonight. Incredibly simple–it took about 5 minutes to make.
Half a can of water packed tuna
Half a can of white beans, rinsed
Fresh parsley leaves
Green onions, chopped
A couple of teaspoons of lemon juice
It tasted great. It’s not something that anyone else in my house will eat, so it will only be on the menu for me. It’ll make a perfect lunch tomorrow when the boys eat leftovers.
