Heart of the Earth



Looks a little gruesome, huh? These are fresh beets from grandma’s garden. She brought them up last week with a wonderful selection of other garden veggies and our new kitchen equipment.



Peel them, chop them, toss them with a little olive oil and salt. Roast until tender.



Couldn’t be easier. Mmmm…

  1. Make Borscht! Cut a chosen piece of red meat and sauté in a soup pot (with garlic and onions if you like), cut carrots, beets, cabbage in a chosen fashion. I like to use a food processor, so the Borscht is thick and all one consistency. Throw in your veg trio and let sauté for a bit. Add beef stock and simmer a good portion of the day. Add salt and vinegar to taste. Serve topped with a garnish of sour cream and dill (fresh if possible).

    • You’ve made me borscht before! It was delicious! We didn’t have quite enough to make borscht this time, but I’m going to have to try it sometime this fall.
